Juicy, present, and unique – a Georgian rose wine, made in qvevri
Strawberry, a hint of cream, and a deeper colour than any rosé you've opened before. Juicy and structured with delicate tannins — this is what happens when a Georgian winemaker makes rose.
Paata uses two grapes in opposite ways. Chinuri — a white-skinned variety — is crushed whole with its skins into qvevri. Tavkveri — a red-skinned variety — is crushed separately, and only the grape must (about 50% of the whole) is added, never the juice. Both rest together in the clay vessel for six months. The result is a full-bodied rosé with layers that keep shifting in the glass.
Blending different grape colours is rare in Georgia. When it happens, it's deliberate. This bottle is the evidence.
Wonderful as an aperitivo on its own. Also pairs with mature cheese and dried fruits.
Chinuri and Tavkveri are both indigenous Georgian varieties — sometimes blended, rarely found outside Georgia.
